Cranberry Walnut Breakfast Muffins

 

 

One of my favorite things to do is bake!  Particularly when I get to experiment and come up with my own recipe, so I was really excited to join with Angie of Little Inspiration & Sonja of Shy Babies on their Newman’s Own Organics FOOD.FUN.HOP!  The kids and I snack on dried fruits all the time, and while I was excited to be a part of this event, I have to admit I sort of figured “a dried fruit is a dried fruit“, but when my packaged arrived, I was pleasantly surprised to find that  is not the case!  These were plump, and much more flavorful than the brands we usually eat.  Plus, they’re organic!  What else could you ask for?  I had a hard time saving the cranberries for my recipe!!

 

 

CRANBERRY WALNUT BREAKFAST MUFFINS

1/4 cup butter, softened

1 cup brown sugar, packed

2 eggs

1 cup milk

1 1/2 cup whole wheat flour

1 tsp baking soda

1 cup oatmeal, uncooked

10 oz Newman’s Own Organics Dried Cranberries

1/2 cup chopped walnuts (optional)

 

Preheat oven to 350 F.  Cream the butter and sugar together.  Then, add the eggs and milk.  Stir in flour, baking soda, and oatmeal until well combined.  Fold in cranberries and walnuts.  Grease a muffin tin and fill each 2/3 of the way.  Bake on 350F for 18-22 mins.

 

These are great warm, but they are also perfect for breakfast on the go!  Make them in advance and grab one on your way out the door in the morning!

    Number 11 The apple cinnamon pancakes because I do not heat up my oven much in the summer because it is already to hot down here in TX
